Ingredients

  • 1 cup chopped onion
  • 4 cups low sodium vegetable broth
  • ¼ cup(s) water
  • 1 15-oz can pumpkin
  • ½ cup unsweetened applesauce
  • 2 tsp curry powder
  • 3 tsp Tabasco® sauce
  • ½ cup(s) unsweetened almond milk

Directions

  1. In a medium saucepan, sauté onion until softened.

  2. Add broth, water, pumpkin, and applesauce, stirring until smooth.

  3. Add curry powder and Tabasco®, and simmer for 10 minutes, stirring occasionally.

  4. Mix in almond milk and remove from heat.
