Summer Ceviche

Serving Size: 1 cup

Ingredients

  • 8 oz shrimp, raw
  • 8 oz scallops
  • ¾ cup lime juice
  • 2 medium (chopped) tomato
  • ½ medium cucumber (peeled and chopped)
  • ½ medium (chopped) green bell pepper
  • ½ medium diced onion(s)
  • ½ cup cilantro
  • ½ tsp cumin
  • 1 tsp salt
  • 1 tsp ground black pepper

Directions

  1. Fill a large bowl with ice water and set aside.

  2. Bring a large pot of water to a boil.

  3. Add shrimp and scallops for 2 minutes.

  4. Remove seafood from pot and place in ice water for 3 minutes. Drain seafood and place in a bowl.

  5. Pour lime juice over the seafood and refrigerate 1 hour.

  6. In a separate bowl, combine tomato, cucumber, green pepper, onion, and cilantro.

  7. Add the seafood, cumin, salt, and pepper, to the vegetables and mix well.

  8. Refrigerate 3 hours. Serve cold in chilled martini glasses.

Notes

You may use bay or sea scallops. If you use large sea scallops, make sure to cut them in half. Add chopped jalapeño or cayenne pepper for an added kick.
