Ingredients
- 4 large eggs, whites only
- ¼ cup fat-free cottage cheese
- ¼ cup Pumpkin Puree
- 1 packet(s) Medi-Weightloss® Buttermilk Cinnamon Pancake Mix
- ½ tsp pumpkin pie spice

Pre-heat a waffle iron.

Combine all ingredients in a blender and blend until smooth.

Pour ½ of the batter onto the hot waffle iron. Spread batter to edges and close lid.

Cook for about 4 minutes, until waffle is crisp and golden.
Notes
Optional: Top with sugar-free maple syrup. This will add an additional miscellaneous serving to your Journal It! instructions.
