Ingredients

  • 1½ cup(s) almond flour
  • 3 Tbsp butter
  • 16 oz fat-free cream cheese
  • 2 tsp vanilla extract
  • 1½ cup Pumpkin Puree
  • 4 oz Greek Yogurt, Plain 0% Fat
  • 4 large eggs
  • ¼ tsp salt
  • 1½ Scoop Signature Spiced Pumpkin Pie Premium Protein Supplement
  • 1½ tsp pumpkin pie spice
  • 1½ Tbsp Monk Fruit

Directions

Crust

  1. Heat oven to 350 degrees F.

  2. Mix almond meal, monk fruit sweetener, and melted butter.

  3. Pat mixture into 9-inch spring form pan coated with cooking spray.

  4. Bake 8-10 minutes until the crust begins to brown. Be careful not to burn.

Filling

  1. Reduce oven to 300 degrees F.

  2. Place the cream cheese, protein powder, vanilla extract, pumpkin pie spice, and salt in a large bowl, and mix until smooth.

  3. Add pumpkin and Greek yogurt. Blend well on medium speed.

  4. Blend in eggs one at a time.

  5. Pour filling over crust, tapping the pan gently on your counter to settle it.

  6. Bake 50-55 minutes or until a knife inserted in the center comes out clean.

  7. Remove from oven and let cool at least 20 minutes before removing the ring from the pan.

  8. Refrigerate for 2 hours (minimum) before serving.
