Ingredients
- 4 4-oz chicken breasts, boneless and skinless, raw
- 4 tsp olive oil
- 1 Tbsp distilled vinegar
- 1 tsp Dijon mustard
- 2 Tbsp chopped scallions
- ¼ cup sugar-free preserves
- 4 cup shredded or chopped butter lettuce
- 2 cups raspberries

Salt and pepper chicken to taste.

Coat a skillet with cooking spray and cook chicken over medium-high heat for 3-5 minutes per side or until cooked through.

In a bowl, whisk olive oil, vinegar, Dijon, scallions, and preserves.

In separate bowls, add 1 cup lettuce, 1/2 cup raspberries, 4 oz chicken, and 1 Tbsp dressing.
