Chicken & Raspberry Salad

Ingredients

  • 4 4-oz chicken breasts, boneless and skinless, raw
  • 4 tsp olive oil
  • 1 Tbsp distilled vinegar
  • 1 tsp Dijon mustard
  • 2 Tbsp chopped scallions
  • ¼ cup sugar-free preserves
  • 4 cup shredded or chopped butter lettuce
  • 2 cups raspberries

Directions

  1. Salt and pepper chicken to taste.

  2. Coat a skillet with cooking spray and cook chicken over medium-high heat for 3-5 minutes per side or until cooked through.

  3. In a bowl, whisk olive oil, vinegar, Dijon, scallions, and preserves.

  4. In separate bowls, add 1 cup lettuce, 1/2 cup raspberries, 4 oz chicken, and 1 Tbsp dressing.
