Thai Beef Salad

Serving Size: 3 oz steak, 1 cup salad

Ingredients

  • 12 oz top round steak
  • 3 Tbsp lime juice
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp olive oil
  • 2 packets Splenda®
  • 1 tsp Fresh Garlic
  • 1½ Tbsp minced ginger
  • 1 tsp curry powder
  • 1 tsp cayenne pepper
  • 1 medium orange bell pepper
  • 1 Tbsp green onion
  • ½ cup cilantro
  • ½ cup finely chopped basil, fresh

Directions

Beef

  1. Place beef in large zipper bag.

  2. In a bowl, mix lime juice, soy sauce, olive oil, Splenda®, garlic, ginger, curry, and cayenne and pour half of mixture over beef. Refrigerate and marinate overnight.

  3. Refrigerate remaining marinade.

  4. Coat a skillet with cooking spray and cook beef (to desired temperature) over medium-high heat. Let rest and slice thinly.

Salad

In a bowl, toss lettuce, bell pepper, green onion, cilantro, and basil with remaining marinade.
