Herbed Thanksgiving Sandwich

Ingredients

  • 4 oz deli turkey breast
  • 3 Tbsp reduced fat cream cheese
  • 1 tsp poultry seasoning
  • 1 bag(s) Medi-Weightloss® Cheddar and Onion Protein Chips
  • 4 large eggs, whites only
  • 1 large egg yolk
  • 1 small whole (2-2/5″ dia) tomato
  • ¼ small red onion
  • 1 cup spinach, raw
  • 2 Tbsp Medi-Weightloss Cranberry Sauce

Directions

Bun Directions:
#. Preheat oven to 350 degrees F.
#. Pulse protein chips and ½ tsp poultry seasoning in a food processor, forming a fine breadcrumb texture.
#. With an electric mixer, whip egg whites until stiff peaks form.
#. Slowly add egg yolk and chip crumbs into whipped egg whites.
#. Spread 4 even rounds (about 4.5”-5” diameter) of the egg mixture onto a lined baking sheet and bake 15-20 minutes. Allow to cool before assembling sandwiches.

Sandwich Directions:
#. In a small bowl, combine cream cheese and remaining poultry seasoning.
#. Spread ½ of the cream cheese and cranberry sauce on each bun and layer half the turkey, onion, tomato, and spinach in between. Repeat for second sandwich.
