Spinach Salad with Tuna Packet

Ingredients

  • 6 cups spinach, raw
  • 3 oz feta cheese, fat-free, crumbles
  • 6 cherry tomatoe(s) cherry tomatoes
  • 3 tsp olive oil
  • 1 Tbsp fresh-squeezed lemon juice
  • ¼ cup chopped red onion
  • 1 can (12.5 oz), drained light tuna (canned in water)

Directions

  1. Wash and chop all veggies to your preference.

  2. Chop up the red onion and start assembling your meal prep container. Add two cups of spinach and evenly divide the cherry tomatoes and red onion.

  3. Make your own salad dressing by whisking together olive oil and lemon juice OR choose a light salad dressing.

  4. Store the dressing separately in small containers to keep the spinach from wilting OR put at the bottom of a mason jar and then shake before eating.

  5. Divide Tuna and fat free feta cheese.

Notes

You can also prep with tuna packets – just buy 1 or 2 packets and serve with your salad.
