Shrimp Burger

Ingredients

  • ½ pound large, peeled and deveined shrimp, raw
  • 1 Tbsp , minced Fresh Garlic
  • 1 Tbsp , minced onion
  • 1 Tbsp reduced fat mayo with olive oil
  • 1 Tbsp , chopped cilantro
  • 1 Tbsp olive oil
  • 4 slice medium (1/4″ thick) tomato
  • 4 leaf outer romaine lettuce

Directions

  1. Coarsely chop one half of the shrimp and set aside.

  2. Place remaining half of the shrimp in a food processor and grind to a coarse puree.

  3. Add cheese, onion, cilantro, reduced fat mayonnaise, and garlic to processor. Combine until smooth.

  4. Transfer contents of food processor to a large bowl and add coarsely chopped shrimp. Mix well.

  5. Line a baking sheet with parchment paper, then divide shrimp mixture into 4 mounds and form into patties. Cover loosely with plastic wrap and refrigerate at least 30 minutes.

  6. Heat oil in large cast iron skillet over medium high heat. Cook the burgers until golden, about 4 minutes per side.

  7. Serve with lettuce and tomatoes. Enjoy!
