Avocado Lime Shrimp Bites

Ingredients

  • 1 cucumber (8-1/4″) cucumber
  • 1 ripe avocado
  • 1 Tbsp chopped red onion
  • 2 Tbsp lime juice
  • 20 large peeled and deveined shrimp, raw
  • 1 Tbsp Old Bay® Seasoning
  • 2 Tbsp , chopped cilantro

Directions

  1. Slice cucumber into thin (approx. ¼ inch) rounds.

  2. In a small bowl, mix avocado, onion, 1 Tbsp of the lime juice, salt, and pepper.

  3. Heat a grill pan over medium-high heat and spray with nonstick cooking spray.

  4. Season shrimp with Old Bay® and 1 Tbsp of lime juice. Cook shrimp 2-3 minutes per side or until done.

  5. Top each cucumber round with avocado, 1 shrimp, and cilantro. Makes 20.
