Ingredients
- 1 cucumber (8-1/4″) cucumber
- 1 ripe avocado
- 1 Tbsp chopped red onion
- 2 Tbsp lime juice
- 20 large peeled and deveined shrimp, raw
- 1 Tbsp Old Bay® Seasoning
- 2 Tbsp , chopped cilantro
Directions

Slice cucumber into thin (approx. ¼ inch) rounds.

In a small bowl, mix avocado, onion, 1 Tbsp of the lime juice, salt, and pepper.

Heat a grill pan over medium-high heat and spray with nonstick cooking spray.

Season shrimp with Old Bay® and 1 Tbsp of lime juice. Cook shrimp 2-3 minutes per side or until done.

Top each cucumber round with avocado, 1 shrimp, and cilantro. Makes 20.
